HOW IS IT MARCH ALREADY? Life does fly by quickly… Today, this week & always, stop and smell the roses. Simplify your life to make things easier for yourself. Laugh at yourself along the way, and if you can’t, give me a holler and I’ll laugh at you (and because I have an obscure laugh, you will laugh at me). Know that everybody around you are just as crazy. Judgement is not a thing cause they gonna be judgin’ ya anyway. Unleash your soul. Eat cake. They’ll understand. We are all human. We all love fudgey cake.
But life is weird and perfect and imperfect all at the same time, and nothing comes completely expected. We don’t need reasons to be happy, but when reasons to be sad dawn upon us, recognize the feelings but channel the energy. Run. Move. Breathe. Cry. Forget about your to-do list for a moment and do the things that make you forget time exists, and clear out all that energy like how you would clean your fridge. We don’t want week-old rotting “leftover” feelings. Gotta eat all the leftovers before the food rots in the fridge (which becomes wasted energy), before we can buy fresh food to fill our fridge. Idk if I make sense, but I hope I do…
Not sure where I was going with this post cause it’s midnight and I was trying to learn a new song on my guitar and I felt inspired because music just brings me to like another level of consciousness lol. But this bread will bring you to another level of consciousness too because it’s like way fudgey and satisfying, and the peanut butter cookie crumble just brings it over the top. It’s one sassy loaf of fudgey vegan chocolate loaf goodness made with the whole grain organic spelt flour from a lovely company close to home.
Do you ever feel so physically tired but you don’t want to sleep because your mind is like on a natural high and is spitting out the best ideas and aspirations and all you’re thinking is “wow life is so good I’m so excited for the future i want to go camping and go to disneyland with my future kids but wait I have so many things to do before I can get to that what’s my plan tomorrow do i need to buy groceries” cause me too.
- LOAF
- 2¼ c. One Degree Organic spelt flour
- ½ c. coconut sugar
- ¾ c. cocoa powder
- 1½ tsp. baking powder
- ½ tsp.salt
- 1⅓ c. almond milk
- ⅔ c. honey
- ⅔ c. apple sauce
- 3 chia "eggs" *
- Peanut butter chips**
- PEANUT BUTTER COOKIE CRUST
- 1 c. peanut butter
- ⅓ c. 2 tbsp. coconut sugar
- 1 chia "egg"*
- Preheat oven to 325 degrees F. Line loaf pan with parchment paper.
- In a large bowl, mix together spelt flour, coconut sugar, cocoa powder, baking powder, salt.
- Add in almond milk, apple sauce, chia eggs, honey, apple sauce, and chia eggs. Mix until a batter forms.
- Pour batter into prepared loaf pan, then sprinkle with peanut butter chips before putting loaf in oven.
- Bake in oven for 50-55 minutes; meanwhile, prepare the cookie crust.
- In a small bowl, add in peanut butter, coconut sugar and chia egg. Mix all together until a cookie dough forms.
- When around 50 minutes are up, take loaf out (it should still be runny in the middle, but the surface should be somewhat crusted/cooked), and cover the surface of the loaf with the cookie dough before putting back in oven for 30 more minutes.
- To prevent top from burning, I covered with some foil in the last 10-15 minutes of baking.
- Once bread is baked, take out from oven and allow it to cool for 20 minutes before removing from pan.
** You can use your favourite chocolate chips!

woah this seriously takes chocolate cake to the next level! I’d rather have that PB cookie topping over frosting anyway! YUM!
