Preheat oven to 325 degrees F. Line loaf pan with parchment paper.
In a large bowl, mix together spelt flour, coconut sugar, cocoa powder, baking powder, salt.
Add in almond milk, apple sauce, chia eggs, honey, apple sauce, and chia eggs. Mix until a batter forms.
Pour batter into prepared loaf pan, then sprinkle with peanut butter chips before putting loaf in oven.
Bake in oven for 50-55 minutes; meanwhile, prepare the cookie crust.
In a small bowl, add in peanut butter, coconut sugar and chia egg. Mix all together until a cookie dough forms.
When around 50 minutes are up, take loaf out (it should still be runny in the middle, but the surface should be somewhat crusted/cooked), and cover the surface of the loaf with the cookie dough before putting back in oven for 30 more minutes.
To prevent top from burning, I covered with some foil in the last 10-15 minutes of baking.
Once bread is baked, take out from oven and allow it to cool for 20 minutes before removing from pan.

*1 chia egg= 1 tbsp chia seeds + 3 tbsp water, soaked for 10-15 minutes ** You can use your favourite chocolate chips!
