The first Monday of every August marks BC Day for the province of British Columbia in Canada.This statuary holiday provides British Columbians some extra time to celebrate their achievements and spend the day with family and friends. Many would make good use of the “long weekend” to head out into the scenic BC forests and parks for camping trips, while others would spend the day relaxing and creating precious memories with their loved ones. Whatever the activity planned, BC Day is definitely worth celebrating.
Ever wondered how different your life would be currently if one particular event of the past did not happen? I feel so blessed and grateful to be able to call beautiful British Columbia my home. The distant towering mountain peaks, the deep blue pacific ocean waters, the crisp west coast air, and the laid-back atmosphere… it is no wonder why British Columbians love their home so much. It is no wonder why I, myself love my home so much.
I am truly thankful and constantly inspired by the lush paradisiacal surrounding environment of British Columbia. To celebrate all the accomplishments of the province this past year, Leung and I have decided to create a recipe honouring fresh, local BC fruits grown in the rich, fertile soils of British Columbia. With hot summer weather in mind, we thought a dessert that was light and fresh would be perfect for this celebration. Whether you are hosting a barbecue patio party or whether you’re just craving a casual dessert, juicy peaches with a generous scoop of refreshing blueberry mint sorbet piled on top can’t really go wrong. You can impress company by serving with wine glasses, or keeping it casual with your favourite ice-cream bowl. Easy, local, and simply delicious.

- 1 peach, halved and pitted
- 1 cup frozen blueberries
- 6 to 8 fresh mint leaves
- ¼ cup almond milk
- Slice the peach in half lengthwise and remove the pit.
- Add in the froze blueberries, mint leaves, and almond milk in a blender or a food processor.
- Blend until the mixture is a creamy soft serve consistency.
- Scoop a generous amount of the blueberry sorbet mixture into eat peach halve.
- Serve immediately.
