Fall is comin’ which means pumpkins, apples, cinnamon, and all the warm spices! My favourite thing about fall are the leaves changing colours, the cooler weather (bittersweet), pumpkin spice everything, pumpkin pie, apple crumbles… mhhmm fall flavours are everything. I love dumping cinnamon on everything.
Oatmeal? dump.
Smoothie? dump.
Cake? dump.
Cookies? dump.
Pie? dump.
Something tastes bad? dump.
A recipe calls for 1/2 tsp.? imma dump 2 tbsp. in dat batter
Everything just tastes so much better with a whole lotta cinnamon. I finished a family club pack of cinnamon by myself in less than a year, and I don’t know if that is healthy…
Enough about my cinnamon addiction… but is anyone on the same boat? I just can’t get enough. If you are, you should really try putting sliced apples in a ziploc or your snack container and shake them up with some cinnamon; apple slices will never be the same again. You’ll never have them any other way. You’re very welcome (;
For this recipe, all you need to do is to cook amaranth beforehand (it’s great to cook a large batch and use it throughout the week for breakfast), chop some apples the morning of, have some toasted nuts on hand, as well as maple syrup and almond milk. Then tadaa! Every morning you can have a yummy super nutritious breakfast to eat before you head out the door! You could even portion out the amaranth in mason jars beforehand, and just put in the toppings the morning of. Super easy and doable even if you are a get-up-from-bed-and-leave-the-house kinda human.
Either way, I think this breakfast is super hearty, healthy, delicious, and completely satisfying to keep you full until your next meal!
- ⅓ c. amaranth + ⅔ c. water
- ¼ c. almond milk
- ½ tsp. cinnamon
- 1 tbsp. honey
- 1 small apple, chopped into chunks
- Handful of dried cranberries, toasted pecans, granola
- To cook the amaranth, bring the amaranth and water to a boil, then simmer for 15 minutes before removing from heat for another 15 minutes.
- Stir in almond milk, cinnamon, honey to the cooked amaranth.
- Top with apple chunks, toasted pecans, and other toppings you have on hand!
