Honey Harvest Amaranth

Ingredients
  • ⅓ c. amaranth + ⅔ c. water
  • ¼ c. almond milk
  • ½ tsp. cinnamon
  • 1 tbsp. honey
  • 1 small apple, chopped into chunks
  • Handful of dried cranberries, toasted pecans, granola
Instructions
  1. To cook the amaranth, bring the amaranth and water to a boil, then simmer for 15 minutes before removing from heat for another 15 minutes.
  2. Stir in almond milk, cinnamon, honey to the cooked amaranth.
  3. Top with apple chunks, toasted pecans, and other toppings you have on hand!
