My method of cooking any weeknight meal is the “dump and done” method. Simply dump all ingredients into a pot, turn on the stove to a boil, allow it to simmer, and voila! A hearty lentil curry is waiting for you in the kitchen.

Golden Lentil Curry with Pita Bread

Serves: 4 days (4 servings)
Ingredients
- 1⅓ c. lentils (any kind)
- 1⅓ c. farro*
- 2 peppers (any colour), roughly chopped
- 2 onions, chopped
- 4 tsp. cumin
- 1½ tsp. turmeric
- 2 tbsp. curry powder
- Water, as needed
- Pita bread, to serve
Instructions
- Cook lentils and farro in a pot together according to package instructions.
- Once lentils and farro is cooked, add in spices, chopped veggies, and water for your preferred consistency. Try not to add water a small amount at a time so the stew doesn't become too runny.
- Simmer until the veggies are cooked through.
- Pack into meal prep containers along with pita bread, or enjoy immediately!
Notes
*you can use another grain, but farro cooking time is the same as lentils and makes the dish extra nutty and hearty! If you choose to use a grain that requires a shorter cooking time than lentils, let the lentils cook a bit before adding the grain so nothing gets overcooked!
