Cook lentils and farro in a pot together according to package instructions.
Once lentils and farro is cooked, add in spices, chopped veggies, and water for your preferred consistency. Try not to add water a small amount at a time so the stew doesn't become too runny.
Simmer until the veggies are cooked through.
Pack into meal prep containers along with pita bread, or enjoy immediately!
Notes
*you can use another grain, but farro cooking time is the same as lentils and makes the dish extra nutty and hearty! If you choose to use a grain that requires a shorter cooking time than lentils, let the lentils cook a bit before adding the grain so nothing gets overcooked!
