Golden Goddess Bowl

This Golden Goddess Bowl features a colourful spectrum of veggies and a sunny yellow sauce. A balanced dinner like this will leave you glowing!

For the finale week of Vegan Meal Prep January, you’ll be having these vibrant goddess bowls for dinner. There is a lot of room for customization; use whatever grain you have on hand or fancy and clear the fridge of any leftover veggies. The creamy golden sauce is seasoned and coloured with turmeric, a trendy spice that has a lot of health potential. Plus, it’s super delicious!

This Golden Goddess Bowl recipe is the dinner for Week 4 of our Vegan Meal Prep series.

The smoked tofu we use is from Soyganic and can be eaten right out of the package without additional cooking. If you cannot find this tofu or something similar, just pan fry or bake some firm or extra-firm tofu according to this recipe.

Serves: 4 servings
 
Ingredients
  • BOWL
  • 6 cups assorted veggies*
  • Vegetable oil
  • Salt & black pepper to taste
  • 1½ cup uncooked grain of choice**
  • 1 block smoked tofu, cubed
  • SAUCE
  • ½ cup non-dairy plain yogurt
  • 1½ tsp apple cider vinegar
  • 2 cloves garlic, finely minced or grated
  • 1 tsp turmeric
  • Salt & black pepper to taste
  • Water as needed
Instructions
  1. Toss veggies in a generous drizzle of oil and season with salt and pepper. Roast at 450°F for 25 to 30 minutes, or until starting to char.
  2. Cook grain according to package directions.
  3. Mix all sauce ingredients in a small bowl, adding water as needed at the end to obtain desired consistency.
  4. To assemble, divide cooked grain evenly between 4 containers. Top with assorted roasted veggies, tofu, and sauce.
Notes
*We used a mixture of 2 sweet potatoes, 1 small head of cauliflower, 3 carrots, and 1 bell pepper
**We used farro but you can also use couscous or for gluten free options use brown rice
