Toss veggies in a generous drizzle of oil and season with salt and pepper. Roast at 450°F for 25 to 30 minutes, or until starting to char.
Cook grain according to package directions.
Mix all sauce ingredients in a small bowl, adding water as needed at the end to obtain desired consistency.
To assemble, divide cooked grain evenly between 4 containers. Top with assorted roasted veggies, tofu, and sauce.

*We used a mixture of 2 sweet potatoes, 1 small head of cauliflower, 3 carrots, and 1 bell pepper **We used farro but you can also use couscous or for gluten free options use brown rice
