If you love melt-in-your-mouth cookies, these vegan snowball cookies should definitely be on your baking list this holiday season!
Can you believe it’s one week until December? These fall months really did fly by, and I can’t believe the holiday season is upon us! When I flip through my calendar and look at all the things that I’d put down on each day in the past months, it surprises me how many things have been crossed off and makes me feel proud and accomplished. Every day seems like a never-ending list of to-do’s, but when you look back, everything seems like a blur and I’m just happy to be where I am in the present. Taking things one day at a time really makes the days go by really quick, and the weeks go by even more quickly.
If there’s one thing I’ve realized from four years of university experience is that you can totally have a full course load and still do more things outside of class than you do for school… and the stuff you do outside of school is always worth more than the time you spend studying to get that extra 5%. That being said, make sure the things you are doing outside of school has a purpose and is something “productive”, whether it be working on your own personal passion projects, initiatives, or simply making time for play to fuel your soul with new and old friends. For me, I like to (very much literally) chase the sunrise, brainstorm fun ideas to do with friends, apply for random grants for the random ideas that pop into my head, write, and improve my flexibility through yoga. At the end of the day, at least I can sleep well knowing that I’ve spent my days doing these things I enjoy rather than being cooped up and still getting the same results as if I hadn’t spent all that time forcing myself to study. It’s strange how having a smaller studying window can actually make you much more productive than if you had reserved a whole day to dawdle and study here and there. My record was making a 29 page study guide of every single order of insects on this Earth in less than 2 hours right before my lab exam, hahahahahaha! Results were questionable, but definitely passed 😉
But enough about that, Leung and I are also announcing our holiday passion project in a week, so stay tuned! You probably have an idea if you have been following us last year 😉 It’s been constantly on my mind for the past 2 weeks and is one of the very reasons I am excited to wake up to get on with the day!

My mom used to make snowball melt-in-your-mouth cookies during Christmastime when my sister and I were little, and they were my favourites! As a kid, my favourite things are always covered in powdered sugar. If I had to pick a donut, I would always go for the “snow white” at our local donut shop (it’s closed now 🙁 ), and if we head to Timmie’s, I’m going to pick all the jelly-filled timbits dusted with powdered sugar. And it goes the same for cookies… gotta love all things rolled in sugar! 😉 It’s like rolling in happiness.
I remember at holiday gatherings, I had a childhood friend who was as much of a chocoholic as I was and we would just go in the basement, play this make-believe life game, make up songs, jump on the couch, play dance revolution, run up and down the stairs, and eat a whole box of costco chocolates until our parents would find out and scold us hahahahhaha! And then the chocolates would get us so hyper we would be so out of control and laughing and cackling like the crazy children we were. Our older teenage sisters (who were only two years older hahahhah) would be in another room playing on computers and being all calm and civilized, and we’d bother them and make them reeeeaaaally annoyed, to the point where they’d just turn from their desktops and yelled at us. And if that didn’t work, they’d stomp upstairs like angry teens (which they were), and told on us because the parents would always be upstairs while the “kids” (us) would be downstairs doing our own thing and making mischief, what we do best after secretly eating a whole box of chocolate.
Did not know where I was going with that story, but talking about sugar and chocolate… these cookies were a huge hit with my mom and she never really likes the stuff I make, so it means a lot when she compliments on anything I make! You guys gotta try them and bring them to a cookie exchange or holiday party this season! Or maybe just have the whole batch yourself and get yourself so high on sugar you end up jumping and giggling like crazy on the couch like when you were little kids 😉
- 1 ¾ c. flour
- ½ c. corn starch
- ¼ tsp salt
- ¼ powdered sugar
- 1 c. vegan butter
- 1 tsp. vanilla
- ¼ c. rum
- 2 tsp. Cinnamon
- 1 tsp. Nutmeg
- 1 c. powdered sugar for rolling
- Preheat the oven to 350.
- Line two baking sheets with parchment or spray with cooking spray.
- In a small bowl, whisk together the flour, corn starch, salt, cinnamon, and nutmeg.
- In a large bowl or the bowl of a stand mixer, beat together the vegan butter and powdered sugar until light and fluffy.
- Add the rum and vanilla, and mix to combine
- Add the dry ingredients and mix to form a thick dough.
- Shape the dough into one inch balls and place 1-2 inches apart on the baking sheets.
- Bake 12-14 minutes, or until lightly browned on the bottom.
- Remove and let cool 15 minutes, then roll in powdered sugar. Enjoy!

What is the topping in the picture? Do you have a recipe for that? Also, are the cookies more crumbly or chewy? I’m looking forward to making these!

Hi Sasha, we can’t wait for you to make these! The cookies are dusted with icing sugar, then topped with melted chocolate and sprinkles. They are melt-in-your-mouth cookies, so neither crumble nor chewy 😉
