Vegan Snowball Cookies

Ingredients
  • 1 ¾ c. flour
  • ½ c. corn starch
  • ¼ tsp salt
  • ¼ powdered sugar
  • 1 c. vegan butter
  • 1 tsp. vanilla
  • ¼ c. rum
  • 2 tsp. Cinnamon
  • 1 tsp. Nutmeg
  • 1 c. powdered sugar for rolling
Instructions
  1. Preheat the oven to 350.
  2. Line two baking sheets with parchment or spray with cooking spray.
  3. In a small bowl, whisk together the flour, corn starch, salt, cinnamon, and nutmeg.
  4. In a large bowl or the bowl of a stand mixer, beat together the vegan butter and powdered sugar until light and fluffy.
  5. Add the rum and vanilla, and mix to combine
  6. Add the dry ingredients and mix to form a thick dough.
  7. Shape the dough into one inch balls and place 1-2 inches apart on the baking sheets.
  8. Bake 12-14 minutes, or until lightly browned on the bottom.
  9. Remove and let cool 15 minutes, then roll in powdered sugar. Enjoy!
