Vegan Snowball Cookies

- 1 ¾ c. flour
- ½ c. corn starch
- ¼ tsp salt
- ¼ powdered sugar
- 1 c. vegan butter
- 1 tsp. vanilla
- ¼ c. rum
- 2 tsp. Cinnamon
- 1 tsp. Nutmeg
- 1 c. powdered sugar for rolling
- Preheat the oven to 350.
- Line two baking sheets with parchment or spray with cooking spray.
- In a small bowl, whisk together the flour, corn starch, salt, cinnamon, and nutmeg.
- In a large bowl or the bowl of a stand mixer, beat together the vegan butter and powdered sugar until light and fluffy.
- Add the rum and vanilla, and mix to combine
- Add the dry ingredients and mix to form a thick dough.
- Shape the dough into one inch balls and place 1-2 inches apart on the baking sheets.
- Bake 12-14 minutes, or until lightly browned on the bottom.
- Remove and let cool 15 minutes, then roll in powdered sugar. Enjoy!
