Half baked bars inspired by my favourite Ben & Jerry’s Half Baked ice-cream!
I’ve been waking up in the crack of dawn for so long I forgot how to sleep past 6:30AM. And by forgot, I mean I physically cannot, and it’s driving me nuts (nuttier than these bars!). This morning my shin was throbbing so hard that I decided to just let myself rest and be bed-bound all morning (since I didn’t have class until 1PM and probably could use more sleep), but nope, brain was overactive and refused to keep my eyes closed. Plus my body was itching to get out of the apartment and on with the day, so that plan failed.
And when I cannot run, I feel so terrible. Like terrible as in, I don’t know how else to cope with the problems in my life cause running for me is such a relief and emotional painkiller (even though I run through physical pain of my bad joints ahahahhaha). Like this morning… it wasn’t great at all, but once I got out of the house, out of my head, and into the yoga studio, it really calmed my mind down, reminded me to just be, and helped me feel just a bit better! Sometimes we just need to tell ourselves we’re fine in order to be fine.
I really can’t spend more than an hour at my apartment by myself because when I do I just feel too alone and I crave human interaction or some sort of external stimulation. Not to get confused with not enjoying time spent by myself, I really do enjoy alone time, but just not cooped up in an apartment. Going out for a run, on an adventure getting lost, running errands by myself… all things I love doing regardless whether I’m alone or with company, but just not being at the apartment. I really am not sure why that is; maybe it’s because I had such a bad time during first-year university when I started living by myself and associate the apartment with those bad memories.
Studying at the apartment? No thank you. If you know me, you know exactly where I’m studying 95% of the time. Above Whole Foods staring down at people buying fruit and flowers; there really isn’t a better study spot, really. If I ever get sleepy, I can just people-watch for a few minutes before getting back to work! Electrical outlet? Check! Convenient location? Check! Consistent wifi? Check! Not a care in the world if you don’t purchase anything? Check! Sounds like a perfect study spot to me!
Ohhh I didn’t know where I was going with all this study talk, but yesย these bars make great study snacks! Perfect brain food because there are a heck ton of walnuts in the brownie base, and have a really great balance of fats, carbs, and protein to keep you alert and on your toes! They keep me satiated for hours, which really helps when I’m trying to cross off a bunch of tasks off my to-do list (so I’m not constantly rummaging my bag for more food and ignoring my responsibilities ๐ ). They help me stay full so I don’t eat lunch by 9:30AM, and regret it for the rest of the day (cause food in my backpack is limited) hahahah.
Anyway, I should sign off now because I gotta actually wake up before my usual time tomorrow and it’s wayyyy past my bedtime. Going to hunt for some snow up on the mountains and see what’s been happening away from the city ๐ just catchin’ up with nature (ohh and I’m bringing these bars with me), so see y’all when I’m back! Will probably be making another batch for this week… I’m hooked!
- BROWNIE BASE
- 1 c. walnuts
- ½ c. almonds
- 1 c. dates, pitted
- ⅓ c. cacao powder
- ¼ tsp. sea salt
- COOKIE DOUGH
- ¼ c. almond butter
- ¼ c. tahini
- 1 tbsp. molasses
- 1 tsp. vanilla extract
- 3 tbsp. coconut sugar*
- 4 tbsp. coconut flour
- 4 tbsp. almond meal
- ¼ tsp. salt
- chocolate chips
- Prepare a large loaf pan by lining it with wax or parchment paper.
- For the brownie base, add in the walnuts and almonds in your food processor, and pulse until the nuts resemble a coarse meal. Add in the dates, cacao powder, and sea salt, and continue pulsing until the mixture resemble a dough. If the mixture is too crumbly for it to hold together, add 1-2 tablespoons of water until the brownie base comes together. Press the brownie mixture onto your prepared pan.
- For the cookie dough, add in all the ingredients listed, except chocolate chips into your food processor. Pulse until the mixture resembles a cookie dough consistency. Add in your chocolate chips. Use your plastic spatula to fold in the chocolate chips into the dough. Transfer the cookie dough mixture evenly on top of the brownie mixture. Chill bars in the fridge.
- Cut the bars into 16 squares. Store bars in the refrigerator for up to 3 weeks.
