Half Baked Bars

Inspired by Ben and Jerry's Half Baked ice-cream, these half-baked bars are chock full of the goodness we all love to find in cookie doughs and brownie batters, but without the unhealthful ingredients and the risks of salmonella! These bars will be a hit for the kids and kids at heart.
Ingredients
  • BROWNIE BASE
  • 1 c. walnuts
  • ½ c. almonds
  • 1 c. dates, pitted
  • ⅓ c. cacao powder
  • ¼ tsp. sea salt
  • COOKIE DOUGH
  • ¼ c. almond butter
  • ¼ c. tahini
  • 1 tbsp. molasses
  • 1 tsp. vanilla extract
  • 3 tbsp. coconut sugar*
  • 4 tbsp. coconut flour
  • 4 tbsp. almond meal
  • ¼ tsp. salt
  • chocolate chips
Instructions
  1. Prepare a large loaf pan by lining it with wax or parchment paper.
  2. For the brownie base, add in the walnuts and almonds in your food processor, and pulse until the nuts resemble a coarse meal. Add in the dates, cacao powder, and sea salt, and continue pulsing until the mixture resemble a dough. If the mixture is too crumbly for it to hold together, add 1-2 tablespoons of water until the brownie base comes together. Press the brownie mixture onto your prepared pan.
  3. For the cookie dough, add in all the ingredients listed, except chocolate chips into your food processor. Pulse until the mixture resembles a cookie dough consistency. Add in your chocolate chips. Use your plastic spatula to fold in the chocolate chips into the dough. Transfer the cookie dough mixture evenly on top of the brownie mixture. Chill bars in the fridge.
  4. Cut the bars into 16 squares. Store bars in the refrigerator for up to 3 weeks.
