These Vegan Nutella LaraBars are chocolate-y and a chock-full of roasted hazelnuts. They will be the tastiest no-bake snack bars you’ll ever make!
Forget about going to the store and spending two bucks per snack bar. These no-bake Nutella LaraBars only require 5 simple ingredients (if you count salt as one) and a few minutes in a food processor. You’ll wonder why you didn’t start making your own snack bars earlier!

Vegan Nutella LaraBars

Serves: 1 8" loaf pan (6 to 8 bars)
Ingredients
- BARS
- 2 cups roasted hazelnuts*
- ½ cup oats
- 3 tbsp cocoa powder
- ½ tsp sea salt
- 24 small dates, pitted**
- Water, as needed
- TO GARNISH (optional)
- Melted dark chocolate
- Extra hazelnuts, chopped
- Maldon sea salt
Instructions
- Line a regular loaf pan with parchment paper.
- In a food processor, add in hazelnuts, oats, cocoa, and salt. Pulse until mixture resembles a crumble.
- Add in the dates to the dry ingredients and pulse some more until mixture begins sticking together. The mixture should be dry enough so that it doesn't stick to your hands when you touch it, but wet enough that it comes together like a dough. Add water a small spoonful at a time to adjust consistency. I needed about 3 tbsp of water.
- Press the mixture evenly into the loaf pan and chill in the fridge until firm.
- Once firm, cut into bars and drizzle with melted chocolate and almond butter. Top with additional nuts and sea salt if desired.
- Store bars in the fridge for up to 1 week.
Notes
*Roast raw hazelnuts at 275°F for 15 to 20 minutes until golden brown and fragrant
