Add a little aloha to your day with these handheld vegan tofu musubi
The rainy and bleak autumn weather has got me dreaming of Hawaii again. Doesn’t help that Facebook keeps tempting me with ultra-cheap flights to Honolulu. How I wish I could be warmed by the Hawaiian sun instead of the infrared panels of the hot yoga studio. When life’s commitments keep you from jetting off to Hawaii, you can bring Hawaii to you by making these teriyaki tofu musubi.
What is musubi? Think of it like a giant nigiri sushi. Traditionally it’s made with a slab of Spam but we’ve teamed up with bumble bloom to make a vegan-friendly version that is just as flavourful. In Hawaii, musubi can be found everywhere, from convenience stores to grocery stores and farmers markets. They are the perfect light lunch to take with you to the beach, or to class/work if you’re making these at home.
You can get really creative with your vegan tofu musubi and add avocado too, but we’ve kept it simple with teriyaki marinated baked tofu and sticky rice seasoned with some homemade furikake (a seaweed and sesame seed mixture). Ready to whisk your taste buds away to the islands of Hawaii?
