I really don’t know the reason behind my long recipe titles…
My best guess would be that the longer the name, the tastier it is!
Because I worked hard in school today, my homework is all finished, and we all know free time calls for some recipe trials… especially when the gloomy May showers are pittering and pattering on my windowsill.
Speaking of school, remember those cookies that you used to buy at the cafeteria at recess/lunchtime with your friends? If you don’t recall those times, how about those Mrs. Field’s cookies you used to drool over at the mall? Well, I guarantee these peanut butter chocolate chip oatmeal cookies taste equally delicious, if not superior, despite the fact that they are vegan and gluten-free. Yep, these PBCCOC’s are flourless! However, I do have to say that these cookies are not very sweet if you follow the recipe, so feel free to increase either the maple syrup or the coconut sugar according to your preference. If you make the vegan version, you can taste the dough!
These have now made it to my “Top 5” cookies list. Well, the list never really existed, but I would whip these up in a double batch if I were you 😉
Chocolate chips for breakfast? I’m in. Chocolate makes us happy; therefore, they are good for the mind and soul. That’s my kind of logic.
- ⅔ c. old-fashioned oats
- 1 tsp. baking soda
- 1 c. all-natural peanut butter*
- ⅓ c. coconut sugar
- 2 tbsp. maple syrup
- 2 cage-free eggs (vegan option: 6 tbsp. water + 2 tbsp. chia seeds, soaked until gelled)**
- 1 tbsp. pure vanilla extract
- ⅔ c. vegan dark chocolate chips
- Preheat oven to 350 F.
- Prepare a baking sheet with parchment paper or non-stick mat.
- Combine together oats and baking soda.
- Add in the rest of the ingredients, except the chocolate chips, and stir until combined.
- Fold in the chocolate chips.
- Using an ice-cream scooper, scoop cookies onto prepared baking sheet.
- Bake for 12-15 minutes.
- Cool on the hot pan for 5 minutes before transferring onto wire rack to cool completely.
**Because I'm vegan, I made these with the chia egg option. However, my momma has tried them with cage-free eggs and she tells me they are equally wonderful!
