I’m back from my extended absence! I’ve been experiencing a lack of inspiration to make anything because I was traumatized and still stressed out from my Chem 113 final even after the exam; I legitimately thought I’d failed the exam because 1.) I did not understand that strange SN1 reaction question (like what on earth is that triangle within a cyclooctane with a KCN molecule just chilling at one of the bonds of the triangle?!?!?!), 2.) the exam had multiple typos, 3.) the physical chemistry questions required the usage of the quadratic formula, and 4.) it was out of 162 marks of tearful insanity. But these past weeks of going back to my peaceful suburban hometown, seeing my dog, meeting up with old friends back from other provinces going hiking, picnic-ing, and beach-ing, catching up on pretty little liars (I’m actually a season behind and I didn’t know Mona died!?!?!??! and Caleb had his hair chopped off?!?!?! somebody please tell me what happened because I’m too scared to watch it alone now that my PLL buddy has left the country for summer vacation. Is it just me or did the show get scarier?!?!?!) have really helped me retrieve back the lively me in preparation of tackling another chemistry course (organic chemistry!!!) because organic chem > physical chem any day.
Slowly realizing my use of brackets is so extreme it breaks up my sentence and makes my writing extremely choppy/ barely comprehendable. #iswearipassedenglishwithflyingcolours
My lack of understanding in physical chemistry while studying for the exam = me losing patience and on the verge of giving up = accepting the fact I will never fully understand physical chemistry = walking into the kitchen to fix up a better lunch aside from eating frozen peas from the freezer. The issue with not having a consistent school schedule during final exam season is that everything unintentionally becomes a little out of whack; even if it was only 10am and I’d just finished breakfast 3 hours ago, I’d be like “Okay, I’ve opened my textbook and turned on my computer. Task 1 out of 34 complete; time for a break” and I’d head into the kitchen and fix myself lunch #procrastieating . Studying makes me more hungry than any other activity. Being too lazy committed to my studies to go grocery shopping means that the only thing in my apartment fridge was a bunch of kale, tofu, and dijon mustard, so since Leung was suffering from chemistry as well, she came over to my place and brought what was left in her apartment fridge so we could make something half decent to photograph.
It’s safe to say that this isn’t really a recipe… just a lunch idea/ guide to use your leftover produce to make something simple, quick and nutritious to fuel your brain!
Whether you are a student, a working professional, or a stressed human, just remember to take breaks, nourish, and treat yourself with kindness because sometimes, a little study break is the only thing you need for you to hit that “save” button in your brain to retain more information. #idktho #isaythisbecausethenyoucantsayigavebadadviceandruinedyourlife
- VEGGIE MISO SOUP
- 8 fresh shiitake mushrooms
- ½ onion, thinly sliced
- 1 carrot, sliced
- ½" thick piece of ginger, juilienned
- 2 tbsp miso paste
- A dash of tamari
- 3 cups water
- TO ASSEMBLE
- 1 handful frozen edamame
- 2 servings black bean noodles
- ½ bunch enoki mushrooms
- 2 kale leaves
- 1 tsp sesame oil
- Miso Tahini Baked Tofu*
- Cilantro, if desired
- In a small to medium sauce pan, bring the vegetables, miso paste, and water to boil and let it simmer for 15 to 20 minutes.
- Add the edamame and noodles and cook for 6 minutes (or 2 minutes less than the package directions). Add the enoki mushrooms and kale and let it cook for an additional 1 to 2 minutes.
- Portion into two serving bowls, top each bowl with ½ tsp sesame oil, tofu, and cilantro and serve hot.
