As the days get incrementally warmer, I can feel myself starting to crave smoothies and salads again. A big bowl of blended frozen fruit is the last thing on my mind as I battle the icy winds and horizontal rain on my way home after class. Usually on those days I’m praying that there are ingredients to make stew or soup. But ugh, those meals are so time consuming and I don’t have that kind of patience when I’m hangry and cold.
These noodle bowls, on the other hand, take about 15 minutes to throw together (less if the veggies are already chopped up) and are so refreshing and nourishing! The real star of the bowl is the miso ginger tahini dressing. Ya’ll are gonna wanna dunk and douse everything in this dressing.
I made this recipe to feed my family of 4 one sunny spring day and they gobbled it right up! The dish is reminiscent of deconstructed summer rolls, which is one of my family’s favourite meals ever. This noodle bowl a great dish to meal prep for the week (more meal prep ideas here) or bring to potlucks.
Tahini is a staple in our kitchens as it is the perfect creamy base for a plethora of sauces. This particular version features fresh lemon juice (lime would also be lovely), a bit of freshly grated ginger, and the sticky sweet ginger bumble bloom, which is a plant-based honey alternative made right here in BC! This dressing is also fabulous for:
- Dressing sturdy salads (i.e. kale)
- Dipping fries, roasted veggies, and fritters
- Drizzling over noodle or grain buddah bowls
- Spreading on toasts, sandwiches, and wraps
