I’m reporting from a couch in an air b&b suite in Whistler, B.C.. I arrived here with Leung’s family yesterday afternoon for a little Whistler getaway; it’s day 2 out of 6 today and wow I’m having such an awesome time already. Yesterday, we walked around the village, had the best veggie burgers straight from the grill, and indulged in Cow’s ice-cream.
Today, we woke up bright and early to embark on our “big hike” to Panorama Ridge. After a long series of switchbacks up the mountain, we emerged into Taylor Meadows, which is this beauty of a place with all types of wild flowers literally sprouting everywhere. The hike from Taylor Meadows up the the ridge was pleasant too because the trail started to even out and became less steep and boring. As we continued up the meadows we soon reached the last stretch of the hike, which was an unpaved path up the mountain and our job was to plow through a rock field and some snow patches. And just like that, we’ve earned our view.
It was such a grand sight; Garibaldi Lake below was vibrant blue, with its surrounding mountains and Black Tusk visible from the ridge. Of course, the first thing we had to do was to munch on a bunch of bars and trail mix before taking some shots to document the view behind us. Granola bars never tasted so delicious. The wind was blowing fiercely when we reached the top so clouds quickly loomed over the sky obstructing our view. While waiting for Mr. Sun to come out and for the sky to clear up a bit, we kept ourselves warm by jumping around and eating more trail mix. After about 20 minutes, the sun peeked out and we took a whole lotta cool shots of the view and us being silly as always.
When we reached back down to the parking lot, we headed over to The Old Spaghetti Factory for supper. We both had spaghetti with marinara sauce cause we #twinning and we somehow always order the same thing wherever we go without discussing with each other prior ordering. That was super yummy and we even got ice-cream at the end of the meal! So here I am lying on the couch typing this after dinner because I need to digest a bit before showering.
Yeah you’re right, this post has nothing to do with tofu bowls, but today was a special day so I had the urge to document the details. Okay it’s only fair for me to tell you a bit about the recipe and what it tastes like. The furikake tofu is crunchy on the outside because of the tortilla chip crumbs, sesame seeds, and seaweed, and they are real delish. Accompany it with crunchy julienne veggies and sushi rice, and tadaa you have yourself a simple, nutritious, and super satisfying meal.
