We’ve made it to the weekend and conquered January, friends! I’m not sure how I managed to get to February, considering each week felt so loooong. Nevertheless, I am grateful and excited for the sunshine this weekend! It’s gonna be cold, maybe even snowy, but ya girl loves her vitamin D. I especially look forward to Saturdays because it’s the one day when I can sleep in, make myself a proper breakfast or brunch, and catch up with friends and family.
Even though February barely began, my calendar is already filled to the brim with deadlines and I feel as if my February is already ‘gone’. My friends and I have to pre-book each other in March for a get-together because everyone is so busy! But you shouldn’t wait until March to make this easy vegan french toast.
With several group projects, papers, and midterms to study for simultaneously, it’s been pretty hard to get any proper relaxation on the weekends. All I want to do is have a slow weekend where I can sleep in, make a lovely brunch, and catch up with my best friends whom I haven’t seen in weeks. Can reading week please come sooner?
Half of my friends are working full-time and the other half are students so finding an overlapping time to even meet for dinner is a challenge. Finding time to travel together is nearly impossible. ‘Nearly’ because three of us managed to coordinate a few days during reading week to go on a mini road trip to Seattle! We’re not sure exactly where we’ll be going or what we’ll be doing with our five-ish days, but planning the trip is half the fun! I’m hoping that the road conditions will improve in the next two weeks so that we can catch some epic sunrises and sunsets in the national parks. Then there are all the cool plant-based eateries and Trader Joe’s! A mixture of outdoor adventure and urban explorations make the best kinds of vacations.
Back to this easy vegan french toast…
I actually made a big batch of this vegan french toast to feed my hungry friends on New Years Day. We stayed up late after our (slightly delayed) countdown watching Forever My Girl on Netflix. (The little girl, Bobby, is so so adorable!) Knowing that we’d sleep in and wake up too hungry to cook a proper breakfast, I prepared a whole loaf’s worth of this french toast the day before. Did all the pan frying on New Years Eve so that I could just reheat it in the oven the next morning; about half an hour at 325°F did the trick. Set it on the table with a variety of spreads, fresh fruit, yogurt, and bumble bloom for a breakfast your friends won’t soon forget!
