It’s been two years since “Radiant Rachels” has come to life, and we couldn’t be more grateful for everyone who has continually been supporting what we do. We read each and every comment left on our site and social media pages, and we just want to say thank you for sticking with us through our two years of existence on this world-wide web!
This year we decided to share an absolutely delicious stack of chocolate orange pancakes to celebrate our 2 year blogiversary. I feel like it was just yesterday when we were sitting at my family’s dinner table trying to think of a blog name and kickstarting this little hobby of ours. I still remember the day we made our very first recipe on a sunny day during our high school spring break, and we ever so excited to write our very first blog post. Some little things in life will just never fade out of your mind.
From our first recipe being featured on buzzfeed to our first product recipe development opportunity, we sure have learned a lot within these past two years and we are crafting up some really reaaalllyyyyy exciting plans for the coming year. We are the only two people behind what we do, but we are always thinking about bigger better ideas for us to reach you better and share more valuable content with you all. Often we are thinking about the next best thing in life, but it’s also very important to remember to be grateful for what we do have and the journey that brought us to where we are. I believe that things turn out the way they’re supposed to, but that doesn’t mean we can sit back and wait for things to magically happen. I mean if ya want pancakes right now, go make yoself some dang good pancakes; pancakes ain’t gonna suddenly appear on a plate for you (unless you’re at grandma’s… then food is constantly being offered to you and you kinda feel like a goldfish that doesn’t know when to stop).
These pancakes are super fluffy and chocolatey with a hint of orange. Chocolate and orange is a combo that can’t really go wrong; my mom makes the yummiest orange chocolate truffles everrrr around Christmas time, and I would sit by the kitchen counter just waiting to taste test while she rolls the individual truffles into their shapes one by one. I think there’s still a picture of me from like eight years ago with chocolate all over my mouth from licking the baking bowls clean after my mom was done rolling out the truffles… I was a classy, glam, & groovy kid, what can I say.
Since this is our blogiversary post, Leung has a message for you all too! She is feeling a little under the weather and is probably ZzzzZZzzz, but here is her little message :
Sometimes I write blog posts when my head isn’t working. I’m mind-blown, yet grateful, that you’re still around. I hope that one day we will be able to share a stack of pancakes in person. These chocolate orange pancakes are better warm (melty chocolate chips!) on a plate in front of you than through a digital screen anyways (;

- PANCAKES
- 1 c. buckwheat flour
- ¼ c. oat flour
- 3 tbsp. cocoa powder
- ½ tsp. baking powder
- ½ tsp. baking soda
- 2 tbsp. honey
- 1 tbsp. orange juice
- zest of 1 orange
- 1 c. almond milk
- SAUCE
- 2 tbsp liquid sweetener of choice (honey or maple syrup work well)
- 1½ tbsp cocoa powder
- Water to thin as needed
- OPTIONAL TOPPINGS
- Orange marmalade
- Orange slices
- Chocolate bark
- Pretzels
- For the pancakes, add in all the dry ingredients in a medium bowl. Add in the wet ingredients and mix until batter forms. Spray your pan lightly with your favourite cooking spray and turn on stove on medium-high. Cook pancakes, around 1-2 minutes on each side.
- For the sauce, mix the liquid sweetener with cocoa powder until combined. Then gradually mix in water a splash at a time until a pour-able consistency is reached.
- Top and garnish your pancakes however you like and enjoy!
