Here is a recap of the best healthy recipes from this past year. Thank you for being a part of Radiant Rachels’ second year of existence! We wish you all a joyful start to the new year and hope to bring you many, many more delicious recipes in the coming year. Cheers!
P.S. Read ’til the end for a bonus trip down memory lane + a super cute gif you wouldn’t want to miss
1. Top recipe of 2015
Vegan Sticky Toffee Pumpkin Pudding
That food-pornographic toffee sauce drip is convincing enough. But if you need further convincing, this vegan and gluten free dessert can be reheated for breakfast the next morning.
2. Most pinned recipe
Packed full of veggies and topped with a light cauliflower mash, this is a hearty and warming meal for any chilly winter day.
3. Most popular on Instagram
Vegan Walnut Chocolate Chunk Oatmeal Cookies
Hailed as the most perfect vegan (and gluten free!) oatmeal cookie out there, it has been a part of many potlucks, school lunches, and has served as the base recipe for many of our other cookie creations.
4. Facebook favourite
An essential for every brunch spread
5. Our personal favourite recipes of 2015
Chew’s pick: Honeycomb Malt Ice-Cream
Creamy soft serve ice-cream using local honeycomb to combat the summer heat. Hmm… not necessarily healthy but good for the soul am I right?!
Leung’s pick: Vegan Gingerbread Hot Chocolate
A luxuriously thick drinking chocolate for the true choco-holics and gingerbread lovers. No weird ingredients here!
BONUS: Our favourite memories of 2015
- Playing truth or dare in Whistler until our eyes could water no more from laughing so hard
- Paddle boarding… “oh it’s just paddle boarding we won’t fall”, then (chew) falling in the water landing on barnacles
- Playing charades at a local park with our friends, and ending up with an audience playing along with us (Franklin was a hard one)
- Going to the Kelowna with (Leung’s) family and playing watermelon chubby bunny
- Going night skiing and forgetting to check the bus times before heading down the mountain and ended up having to wait 1 hour for a bus to come in the middle of an empty village (we busted out Christmas carols to keep ourselves occupied)
- Splattering neon paint in a parking lot to make a photo booth backdrop for an event late at night
- Mimicking Britney Spears in her Christmas song “Can you hear me”, and dying of laughter during finals season
- Gluing nearly all 20 digits together with super glue as we tried to piece together flower crowns for our photo shoot
- That heck of a transit obstacle course to Grouse Mountain with two other friends on New Years Eve and our juice box countdown
Thank you for tuning in with us this year, and we wish you the grandest time with your family and friends as we conclude the year of 2015. Cherish these moments as we plunge into the new year with positive thoughts and intentions. People often experience negativities in life because they expect it. When having fun, many of us may think “This won’t last. Life shouldn’t be this good!”. But the disasters in life aren’t so much a disaster because they are all situations waiting for us to change our minds toward it. Life is supposed to be enjoyable; take time out to do things just because they are fun and not because “life is a struggle”. Enjoying life takes practice. When life is going the way you want and the voice in your head says “it can’t possibly last”, tell yourself “it’s just about to get better!”.
Cheers,
Rachel Chew & Rachel Leung
