3. Most Popular on Instagram
Pecan Crumble-topped Sweet Potato Scones
This was a well-loved post on Instagram, and we totally understand why. They’re our personal favourite too! These moist gluten free and vegan scones just melt-in-your mouth. We’re also all about the chunks and these scones have wonderful textural contrast with sweet roasted yam and crunchy pecans. Chew especially loves these.
Our Personal Favourite Recipes of 2014
Chew’s Picks
When Leung first made these, I demanded her to make me more. A dollop of chocolate in a nest of coconut goodness. Best of all, the colours of the nests 100% natural, yet super vibrant!
These Nanaimo bars are better than the traditional recipes loaded with sugars and fats. You gotta try them out to believe it!
Farm Fresh Blueberry Shortcakes
Inspired by our favourite berry farm in British Columbia, these blueberry shortcakes are like a blueberry pie in a shortcake form.
Chocolate Cherry Buckwheat Scones
Studded with sweet cherries and chocolate chips, these gliuten-free scones are tender and perfect for breakfast or an afternoon snack!
Avocado Pasta-stuffed Portobello Mushrooms with Sweet Potato Shoestring Fries
Where can I start? This is probably one of my all-time favourite savoury dishes I have ever made. Vegan, easily gluten-free if using gluten-free pasta, and super simple to make!
Leung’s Picks
This is the recipe I’ve made the most number of times this year. If I’m having pancakes for breakfast, you can bet that I’ll be eating these ones. From this basic recipe, I’ve created countless variations. Future plans for this pancake recipe include updated photos, recipes for variations, and maybe even a video tutorial to show you how I get perfect pancakes every time.
This is actually the best chocolate cake in the world. No exaggeration, really! Even though this was made for a family member’s birthday, Chew saved me a big ol’ slice of this mega delicious chocolate cake. Since it was such a huge slice (more like a quarter of the cake), I was going to share it with my family. I’m not exaggerating, but I ate the entire thing all by myself in one sitting because it was just that good. Bonus: this cake has so much veggies in it you’re essentially eating a salad. So go do everyone a favour and make this cake, because it’s someones birthday somewhere in the world.
Do you like cookie dough? How about brownies? And Ben & Jerry’s ice cream? Well then I am 200% sure you will looooooooooove this vegan and gluten free bar. It honestly tastes just like Half Baked ice cream, making it a much healthier way to curb that Ben & Jerry’s craving. Salty and sweet, chewy and crunchy, I shall leave you drooling with this recipe.
I started making my own granola this year and have discovered how insanely easy and economical it is! I’ve managed to whip up a batch and stuff it in the oven in under 10 minutes, just before running out the door to meet Chew for an ice cream run. Stores will charge you a whopping $7 for a tiny bag of granola; for that price we could make so many batches of this vegan and gluten free Pumpkin Spice Granola! Super clumpy, contains a ton of real pumpkin, and with no refined sugars, this is one of my favourites!
Super Easy, Super Healthy Ferrero Rochers
And because I couldn’t possibly leave out this genius recipe, I will end this roundup with these gluten free and vegan Ferrero Rochers. All the chocolatey hazelnuttiness we love from the classic confection but made with all natural ingredients. Nothing to stop you from consuming a dozen.
