Summers are best spent hiking for sweeping views, wading in the ocean or a lake, and camping outdoors under the starry sky. Here are our five favourite vegan camping recipes to make when we’re enjoying the great outdoors.
1. Breakfast: Oatmeal Mix
We’ve camped with less-than-adequately-warm sleeping bags few too many times so a warm breakfast is a must! Per 1 serving, put 1/2 cup quick oats, 2 to 3 tsp coconut sugar (depending on how sweet you like your oatmeal), 1/2 tsp cinnamon, and a pinch of sea salt into a ziploc bag. When it’s breakfast time, heat 1 cup of water, or non-dairy milk if you’re glamping, add your pre-made oatmeal mix, and simmer until creamy and oats are puffed and soft. Serve with fruit, nut butter, seeds, jam, or any of your other favourite toppings.
2. Lunch: Grilled Veggie Sandwiches, Wraps, or Pitas
We usually spend at least one day hiking near the campsite and need something that can be taken on-the go. In the morning we’ll grill up sticks of zucchini, eggplant, and bell pepper and stuff it into a tortilla, sliced bread, or pita pocket with hummus, guacamole, and smoked tofu. A nourishing and incredible tasty way to refuel after an adventure.
3. Snack: Power Balls
Camping is supposed to be an affordable vacation, so cut costs by making your own snacks! No-bake energy balls will keep at room temperature for a few days and make nutritious and convenient hiking snacks. We have a few recipes on the blog that you should try: strawberry-stuffed almond butter, peanut butter chocolate chip, and hemp spirulina.
4. Dinner: Loaded Vegan Hot Dogs
Our favourite vegan sausages are the apple sage ones from Field Roast. We loaded it with guacamole, caramelized onions, and vegan condiments. Organic ketchup is a must!
5. Dessert: Banana S’mores Boats
What is camping without s’mores? Not camping, that’s what we say. And because we’re #extra we have to make everything next-level, including our s’mores. Banana boats can be stuffed with whatever your heart desires, but we particularly like the combination of vegan marshmallows, dark chocolate, pretzels, and peanut butter. Find the full recipe here!
