A good picnic should have lots of finger foods, because that means you can eat a small portion of many dishes. I’m all about having variety, but sometimes having variety means a lot of work. Entertaining friends is one of my favourite things to do, but I still have those lazy days (ex. today) where my brain is working at the pace of an elderly tortoise and my 11:11 wish is for the food to make itself. We’re on heat wave day who’s-still-counting here in Vancouver (it’s still over 30 degrees?!) and I just came back from a BC Day backpacking trip covered in mosquito bites. Even sleeping in the basement couldn’t prevent me from walking up too warm and super itchy at 1am. I hauled my half-awake self up the stairs to get Mama Leung’s tiger balm and sloppily smeared some over my ankle, behind my knees, and the part of my shoulder I could reach. Then drowsily plonked myself back into bed. I continued to itch until 6am, and reasoned it was a somewhat humane time to get out of bed. Made myself a chocolate smoothie (a non-green smoothie is a real treat!) then thought about how I should spend my Wednesday. My legs are still kinda jelly from hiking over 40km but I have two things to accomplish today, and a lot of mosquito bites to itch. One, write this blog post. While itching my ankle. And my shoulder when I hit a writers block. Two, pack my backpack for a retreat this weekend. Ugh the back of my knees are also extraordinarily itchy. Will there be more mosquitos? Pls no, I’m not ready.
I kinda just want to sit on my covered patio and eat these vegan pigs in a blanket and ignore my to-do list. This recipe has a high reward to effort ratio so maybe I’ll still feel accomplished, heh!
These vegan pigs in a blanket require just 2 ingredients (that are both store-bought) and the “honey” mustard dip is made with 4 pantry staples, so this recipe is literally the easiest appy ever. Not only are these vegan pigs in a blanket incredibly easy to make (I would barely consider it ‘making’ but rather ‘assembling’), your omnivorous friends and family will be elated to have these to munch on. There is something so nostalgic about pigs in a blanket, maybe because Vienna sausages made regular appearances at potlucks in my childhood. The key to making delicious vegan pigs in a blanket is to purchase a high-quality, good tasting vegan sausage. We love all the flavours from the Field Roast brand, but also like the taste and texture of Gusta’s sausages. None of that cheap Tofurky stuff please.

- Lavender Blueberry Pop Tarts
- Mango Basil Summer Rolls with Spicy Almond Butter Sauce
- Mint Sugar Snap Pea Pasta Salad
- Purple Sweet Potato Salad with Macadamia Nut Dressing
- PIGS IN A BLANKET
- 3 vegan sausages*
- ½ package vegan frozen puff pastry, thawed according to package directions**
- "HONEY" MUSTARD DIP
- 3 tbsp vegan mayonnaise
- 2 tbsp mustard
- 2 tbsp Classic bumble bloom***
- 1 tsp apple cider vinegar
- Preheat oven to 400°F and line a cookie sheet with parchment paper or a non-stick silicon mat.
- Cut each sausage into 3 even pieces.
- Roll out thawed puff pastry into a ⅛" thick rectangle and cut into 9 triangles, as if you're making croissants.
- Place a sausage piece at the wide end of each triangle and roll it up (again like a croissant). Use some water to help seal the end.
- Arrange the rolled pigs in a blanket evenly onto prepare cookie sheet and bake for 15 minutes, or until golden brown.
- While the pigs in a blanket cool, make the dip by whisking together all the dip ingredients.
- Serve while warm or at room temperature.
