When a tub of Neapolitan ice cream comes out, which flavour do you pick out? Chocolate, vanilla, strawberry, or a marble of all three? I was the kid that took a scoop of vanilla and a scoop of chocolate, leaving an awkward monument of strawberry ice cream in the middle. Artificial strawberry wasn’t (and still isn’t) my thing.
Growing up, Neapolitan ice cream showed up at just about every potluck gathering. Perhaps moms thought it would appeal to a larger crowd. Or at least would help ease the headache those that battle indecisiveness get when presented with several flavours of ice cream. Someone help our poor souls at Earnest and Rain or Shine.
When I saw these adorable baby strawberries at my local grocery store, I just couldn’t resist! They were thrown into a blender with some frozen banana and a splash of almond milk and ta-daaaaaaa. Out came this delicious layered smoothie to cool me down on a hot afternoon. Think of it like drinkable vegan “ice cream”.
Thick and flavourful, dairy milkshakes have nothing on their vegan cousin. I can’t decide which layer is my favourite (unlike my childhood experience with the potluck ice cream) because every layer is so dang delicious. Rich chocolate, fresh strawberry, and palate-cleansing vanilla. Yum yum~
This is potentially the most fun way to consume half a day’s worth of fruit. This “milk”shake is naturally sweetened, thickened, and flavoured, making it perfectly acceptable to have for breakfast, snack, or pre-workout for an energy boost.
For the days when you crave something chocolate-y, fruity, and vanilla-y, this Neapolitan milkshake will be there for you. And it’s vegan too, so there shouldn’t be any hesitation as to whether or not you should indulge in something like this. Because the answer will always be yes.
- 2 large bananas, sliced and frozen
- ½ cup + 1 tbsp (9 tbsp) almond milk, divided
- 1 tbsp cocoa powder
- A heaping ½ cup fresh strawberries
- ¼ tsp pure vanilla extract
- In a small food processor or a powerful blender, add one third of the frozen banana coins, 3 tbsp of almond milk, and the 1 tbsp of cocoa powder. Blend until smooth and divide between 2 glasses.
- Roughly rinse out the bowl of the food processor, add another third of the frozen banana coins, 3 tbsp of milk, and all the strawberries, blending until smooth to make the second layer. Again, divide amongst the 2 glasses.
- To make the final vanilla layer, rinse out the food processor, add the remaining banana, milk, and vanilla extract and blend until smooth. Top the two glasses off with the vanilla layer and serve immediately.
