You know you’re an adult when you’re parents don’t even question why you’re having ice cream for dinner. In fact, they asked if they could try some.
Having relatives in town and being on summer break means being tourists in our own city and eating out day after day. By the end of it, my body needs a vacation from vacation, my belly fat trumpets its return, and my digestive system pleads for fresh fruits and veggies. As you may already know from our Instagram, we’re ice cream addicts. While I usually don’t care much for food holidays (there are far too many to keep up with), I needed to take part in National Ice Cream Day. Yes, need.
Trying to delay the arrival of more fat cells and taking my digestive system’s request into account, I settled on having nice cream. And since I was out the entire day, I had it for dinner. That’s detoxing right? Frozen bananas, cherries, and a spoonful of coconut cream got thrown into my retro (or antique, who knows) food processor and before my mom finished plating the rest of the family’s spaghetti, I had made myself a glorious mountain of nice cream. Clearly I’m the one winning at this whole adulting thing. After inhaling the entire thing, minus the 2 spoonfuls my parents ate, I still felt like Ice Cream Day needed a legit celebration. So I planned to make up for it the next day with a batch of salted caramel corn ice cream sandwiches.
I’ve heard of potato chips in cookies, but never tried it myself. Pretzels go into desserts all the time, why don’t chips join in more often? Sure guac and chips is delish but let’s get a little creative. Mixing in crushed salted tortilla chips gives our best-ever vegan and gluten free cookie a surprise crunch mid-bite into the soft cookie and creamy ice cream. And that salted caramel sauce, I want to dip everythaaaang into it! Slow cooking the coconut sugar gives the caramel a coffee-like flavour. Even your coconut anti-fans will be converted.
Tip: crush the tortilla chips until semi-fine, meaning almost to a flour but with a few larger flakes.
