I’ve never had dole whip, but since Leung had it in Disneyland and told me how she loved it a few years back, I was sold that I would love it as much as she does (cause we are always twinning in all of our food choices). Like actually, we would just go into a restaurant, look at the menu, chat about things not involving the menu, look up to the waiter, and order the exact same thing. This has occurred many many times, but sometimes if we both want to try a bunch of things, we’d order a bunch of things for us to share.
I’ve never tried dole whip, but was confident that I could re-create the same thing upon Leung’s description of it, and it passed her taste test, so if you love dole whip, this one’s for you! I could legit eat this all day long; it’s just so dang good!! Bring yourself to a glorious sweaty summer’s day in Disneyland. Ugh I really wish I could be there right now with my best friends running and laughing our way through disneyland. But for now, I’ll just make myself a large bowl of this and eat it from my pineapple bowl, as should you.
If you haven’t tried amaranth yet, it’s like the sticky cousin of quinoa and packs a whole lot of complete plant protein, vitamin C, calcium, and iron. It’s like super oatmeal with a nutty flavour!
- DOLE WHIP
- 2 c. frozen pineapple
- ¼ c. coconut milk
- 2 tbsp. honey
- AMARANTH
- ½ c. amaranth
- 1 c. water
- TOPPINGS
- Bananas, mango, pineapple, shredded coconut, granola, soy yogurt etc.
- To cook the amaranth, bring the amaranth and water to a boil, then simmer for 15 minutes before removing from heat for another 15 minutes.
- For the dole whip, add all the ingredients into a high speed blender and blend until an ice-cream consistency is reached.
- Garnish with your favourite toppings!
