It’s almost Christmas and tomorrow will be our big annual Christmas gathering because all of our old friends are back in town and that calls for a big celebration with everyone together! Every year we have a blast telling the most absurd happenings in the last 4 months apart, exchanging gifts, playing games, taking tacky photos, all while munching on food nonstop throughout the night.
Spaghetti with pesto seems to be the dish that appears on our table every year because it never seems to get old. I was feeling festive and cute so I told Leung my vision and ask her to help me twirl the linguine into christmas tree shapes, and also demanded her to carve out stars with a tomato. They came out so adorable I think any kid or kid-at-heart would love this dish as part of their holiday dinner!
I came back grocery shopping for the party tonight and I forgot how enjoyable grocery shopping could be when transit isn’t part of the equation. A few days ago when I went out for groceries, the guy who bagged my items looked from me to the amount of stuff I was buying and back to me again, and said “you drove here right”.

I struggled so hard walking from the bus stop back home that my reusable bag broke at the handle, but a really nice man happened to have a couple plastic bags on him and gave them to me. Always will be grateful for people like him because I managed to get home without dropping more groceries.
Anyways, I should go to bed now because I have a big menu to tackle tomorrow to feed the company. Gotta be a good host ya know. Herb + kale stuffing, sweet tater mushroom tart, roasted potatoes, and some sort of broccoli and carrot dish because we gotta get our dark green and orange veg in our system to make up for the amount of cookies we’ll be ingesting all night #balance . So excited I can hardly wait… been missing everyone so much!
- PESTO
- 3 cloves garlic
- 2 handfuls almonds, toasted
- 1 oz. basil (28 grams)
- Extra virgin olive oil
- Salt & pepper, to taste
- Lemon juice, optional
- REST OF THE DISH
- Linguine pasta
- Dried cranberries
- Tomato
- Cook linguine according to package directions.
- For the pesto, add in the garlic, almonds, basil and blend. Stir in the olive oil until you reach an oozy consistency. Season to taste.
- To assemble, toss the pasta with pesto and dried cranberries. Use a fork to help you mould pasta into christmas tree dome shapes. Carve out a star with a tomato to decorate the top of the tree!
