Matcha Black Sesame Muffins

The black sesame seeds in these muffins provide many essential minerals, calcium, and protein for optimum health. Matcha powder is also added for a deep earthy flavour, while providing antioxidants and improving brain function in addition to many other health benefits.
Ingredients
- 1 c. oat flour
- 2½ tbsp. coconut flour
- 1½ tsp. baking powder
- 2 tsp matcha powder
- ¼ tsp. salt
- 6 tbsp. honey
- 2 eggs
- 1 tsp. vanilla
- ½ c. almond milk
- ½ c. black sesame seeds
Instructions
- Preheat oven to 375 F.
- Prepare muffin tins with muffin liners.
- In a medium bowl, add in oat flour, coconut flour, baking powder, matcha powder and salt. Mix until dry ingredients are evenly combined.
- Add in the wet ingredients to the dry. Mix to combine, but do not over-mix.
- Fold in the black sesame seeds.
- Transfer batter into prepared muffin tins.
- Bake for 15-17 minutes, or until toothpick inserted comes out clean.

Oops! Thanks for letting us know, we’ve corrected the mistake. There should be 2 tsp of matcha powder mixed in with the dry ingredients.

Hi. I don’t have coconut flour nor honey. Could I substitute coconut flour with all purpose flour? What could be an alternative for honey?

You could use all purpose flour in place of coconut flour, but you would need more than 2 1/2 tbsp of regular flour as coconut flour absorbs a lot more moisture than all-purpose. For honey, you could substitute it with any liquid sweetener you have, such as maple syrup.

Hi! Can I substitute both oat and coconut flour with all purpose flour? Can I also use regular milk instead of almond?

Hi Jessica, I have not tried it with all purpose flour but it should be okay. You can substitute the almond milk for regular milk for sure!
