On those summer mornings when it’s already hot and sticky at 8am, I wake up with a desire for a cold breakfast to refresh my palate. This cooling Mango Berry Smoothie Bowl satisfies just that.

A big bowl of sweet fruit is the perfect pre-workout breakfast. On the days where I can exercise in the morning, I split my breakfast into two smaller meals. This Mango Berry Smoothie Bowl is a great “first breakfast” as it slashes my morning hunger pangs without weighing me down. It’s rather difficult to give 100% effort during a workout if I feel like I’m carrying an extra five pounds of breakfast.

This particular smoothie recipe is very basic: banana, milk, and one type of frozen fruit. The trick to making a thick and flavourful smoothie is to use frozen fruit. It will prevent the smoothie from becoming soupy and bland as it melts; this is what happens when ice cubes are used. Plus, frozen fruit stores well and is convenient to have on hand. Seeing that mangoes are in season and I’m finding ways to use the organic frozen mango in my freezer, I went with a mango smoothie base. Also, I chose to keep this vegan by using almond milk. Another delicious option would be coconut milk! You know me and my coconut.

Of course, this smoothie can be enjoyed through a straw, but we’re eating this à la Instagram today. Bowl, spoon, and with an assortment of symmetrically arranged toppings. Both Chew and I have been obsessed with Instagram and all the gorgeous food photos we see there. So much inspiration!

Mango Berry Smoothie Bowl

Ingredients
  • 1 ripe banana, divided
  • ¾ cup almond milk
  • 1 cup frozen cubed mango
  • Frozen blueberries
  • Frozen raspberries
  • Toasted coconut
  • Ground flax seed
Instructions
  1. In a blender, blend ½ of the banana with almond milk until smooth.
  2. Add frozen mango and blend until smooth. Use a small spatula to scrape the sides and push the large chunks towards the blade if necessary.
  3. Pour into a serving bowl and top with remaining banana, sliced, frozen berries, toasted coconut, and flax seeds.
