Leung's Master Granola Recipe

Serves: About 5 cups (10 servings)
 
Ingredients
  • ½ cup fruit puree
  • ¼ cup oil
  • 3-4 tbsp liquid sweetener
  • 2½ cups oats
  • ⅔ cup raw coconut chips
  • ½ cup raw nuts, roughly chopped
  • ⅔ cup mix-ins
  • ¼ tsp sea salt
  • About 1 tbsp ground spices
Instructions
  1. Preheat oven to 300°F and line a large cookie sheet with a non-stick silicone mat.
  2. In a large mixing bowl, mix together the fruit puree, oil, and liquid sweetener until roughly combined.
  3. Dump in all the remaining ingredients and mix until everything is evenly coated.
  4. Transfer the granola mixture onto the silicone mat. Firmly press mixture into a single layer about 1 cm thick.
  5. Bake in preheated oven for 45-55 minutes, or until golden brown and the top is dry to the touch (just brush it very very lightly with your finger).
  6. Cool completely on the cookie sheet before breaking into large clumps and transferring to a storage container.
