Sugar Snap Pea Pasta Salad

Serves: 4
- 1¼ c. pasta of choice, dry
- Juice and zest of 2 lemons
- 1 tbsp. maple syrup
- 3 tbsp. olive oil
- ½ c. mint, chopped
- 3 c. sugar snap peas, chopped
- Salt and pepper, to taste
- Cook pasta according to package directions. Run pasta under cold water when al dente.
- In a large bowl, whisk together lemon juice, zest, honey, olive oil.
- Toss in cooked pasta, sugar snap peas, and mint.
- Add in salt and pepper to taste!
