Sugar Snap Pea Pasta Salad

Ingredients
  • 1¼ c. pasta of choice, dry
  • Juice and zest of 2 lemons
  • 1 tbsp. maple syrup
  • 3 tbsp. olive oil
  • ½ c. mint, chopped
  • 3 c. sugar snap peas, chopped
  • Salt and pepper, to taste
Instructions
  1. Cook pasta according to package directions. Run pasta under cold water when al dente.
  2. In a large bowl, whisk together lemon juice, zest, honey, olive oil.
  3. Toss in cooked pasta, sugar snap peas, and mint.
  4. Add in salt and pepper to taste!
