Vegan Pigs in a Blanket

Ingredients
  • PIGS IN A BLANKET
  • 3 vegan sausages*
  • ½ package vegan frozen puff pastry, thawed according to package directions**
  • "HONEY" MUSTARD DIP
  • 3 tbsp vegan mayonnaise
  • 2 tbsp mustard
  • 2 tbsp Classic bumble bloom***
  • 1 tsp apple cider vinegar
Instructions
  1. Preheat oven to 400°F and line a cookie sheet with parchment paper or a non-stick silicon mat.
  2. Cut each sausage into 3 even pieces.
  3. Roll out thawed puff pastry into a ⅛" thick rectangle and cut into 9 triangles, as if you're making croissants.
  4. Place a sausage piece at the wide end of each triangle and roll it up (again like a croissant). Use some water to help seal the end.
  5. Arrange the rolled pigs in a blanket evenly onto prepare cookie sheet and bake for 15 minutes, or until golden brown.
  6. While the pigs in a blanket cool, make the dip by whisking together all the dip ingredients.
  7. Serve while warm or at room temperature.

*We used Field Roast's Frankfurters
**Tenderflake's puff pastry is vegan!
***Can substitute for any liquid sweetener
