Vegan Pigs in a Blanket

- PIGS IN A BLANKET
- 3 vegan sausages*
- ½ package vegan frozen puff pastry, thawed according to package directions**
- "HONEY" MUSTARD DIP
- 3 tbsp vegan mayonnaise
- 2 tbsp mustard
- 2 tbsp Classic bumble bloom***
- 1 tsp apple cider vinegar
- Preheat oven to 400°F and line a cookie sheet with parchment paper or a non-stick silicon mat.
- Cut each sausage into 3 even pieces.
- Roll out thawed puff pastry into a ⅛" thick rectangle and cut into 9 triangles, as if you're making croissants.
- Place a sausage piece at the wide end of each triangle and roll it up (again like a croissant). Use some water to help seal the end.
- Arrange the rolled pigs in a blanket evenly onto prepare cookie sheet and bake for 15 minutes, or until golden brown.
- While the pigs in a blanket cool, make the dip by whisking together all the dip ingredients.
- Serve while warm or at room temperature.
*We used Field Roast's Frankfurters
**Tenderflake's puff pastry is vegan!
***Can substitute for any liquid sweetener
