A generous pinch each of freshly grated nutmeg and ground cinnamon
½ cup oat flour
½ cup all-purpose flour
2 tsp baking powder
¼ tsp sea salt
EGGNOG SAUCE
1 cup vegan eggnog*
Instructions
WAFFLES: Make the chia egg by combining the ground chia seeds with water. In a large mixing bowl, whisk the chia egg, eggnog, coconut oil, vanilla, and spices together until smooth. Add the oat flour, all-purpose flour, baking soda, and salt to the bowl and whisk until incorporated. Preheat and grease a waffle iron. Once hot, cook batter according to waffle iron instructions. My waffles took about 7 minutes per batch.
SAUCE: Place eggnog in a small sauce pan and bring it to a simmer over medium-high heat. Continue to simmer until reduced by half (about ½ cup left in the pot). Adjust sweetness if desired.
To assemble: Place a few waffles on a serving plate and top with eggnog sauce, vegan vanilla ice cream, fruit, granola, Christmas sprinkles, and whatever else your heart desires.
Notes
*I used the So Delicious Coconut Holiday Nog which is very sweet (15g of sugar per ½ cup). So if you use a less sweet variety, add 1 tbsp of maple syrup to the batter and 1 tbsp to the sauce.
