Pineapple Dole Whip Amaranth

Ingredients
  • DOLE WHIP
  • 2 c. frozen pineapple
  • ¼ c. coconut milk
  • 2 tbsp. honey
  • AMARANTH
  • ½ c. amaranth
  • 1 c. water
  • TOPPINGS
  • Bananas, mango, pineapple, shredded coconut, granola, soy yogurt etc.
Instructions
  1. To cook the amaranth, bring the amaranth and water to a boil, then simmer for 15 minutes before removing from heat for another 15 minutes.
  2. For the dole whip, add all the ingredients into a high speed blender and blend until an ice-cream consistency is reached.
  3. Garnish with your favourite toppings!
