In a food processor, pulse the oats, almonds, coconut, and salt until medium-fine.
Add the dates and almond butter and blend until a sticky dough is formed. You can add water 1 tsp at a time if it is too dry. The mixture should stick together when pressed between two fingers.
Take a heaping tablespoon of the dough and flatten it into a circular disk. Place about ½ tsp or so of diced strawberries in the middle and wrap the dough around the filling, then roll into a smooth ball. Repeat with the remaining dough and filling. Store in the refrigerator.
Notes
*This step is optional but provides a nutty flavour. Heat 1 to 2 tsp of oil on a skillet over medium-high heat. Add the oats and cook the oats until lightly browned and fragrant, about 3 to 5 minutes. Stir frequently. **Toast coconut at 350°F for about 3 to 5 minutes. Keep an eye on them as they can burn easily!
