Toasted Coconut Lemon Buckwheat Porridge

Ingredients
  • ⅓ c. buckwheat groats
  • 2 tbsp. toasted coconut
  • 1½ tbsp. chia seeds
  • ⅓ c. + 4 tbsp. almond breeze unsweetened almond milk
  • 1 tbsp. honey
  • juice and zest of half a lemon
  • TOPPINGS: fruit of choice, nuts, seeds,bee pollen, honey, almond milk, toasted coconut, nut butters
Instructions
  1. Add in buckwheat, coconut, chia seeds, almond breeze in a small pot on medium high heat.
  2. Once boiling, reduce to simmer and let sit for 10-15 minutes to cook.
  3. Add in honey, lemon juice and zest. Transfer to serving dish and add in your favourite toppings!
