Vegan Pumpkin Cookie Dough

- ⅓ cup coconut oil, melted
- ⅓ cup coconut sugar
- ¼ cup molasses
- 1 tsp pure vanilla extract
- ¼ cup + 2 tbsp pumpkin puree
- 1½ cup oat flour*
- ¼ tsp salt
- ¼ tsp baking powder
- ¼ tsp baking soda
- 1 tbsp ground cinnamon
- ¼ tsp ground cloves
- 2 handfuls chocolate chips
- Mix coconut oil, coconut sugar, molasses, vanilla, and pumpkin together in a small mixing bowl until combined.
- Add flour, salt, baking powder and soda, and spices and mix until well combined. Fold in the chocolate chips.
- RAW: Roll heaping tablespoonfuls of cookie dough into balls and enjoy!
- BAKED: Flatten cookie dough balls and bake at 350°F for 15 minutes.
*Alternatives: Any gluten free flour or flour blend. Whole wheat flour can be substituted if you aren't allergic to gluten.
