Individual Raspberry Mousse Trifles

Ingredients
  • CHIA JAM
  • ½ cup fresh or frozen raspberries, thawed if frozen
  • 2 tbsp honey
  • 1 tbsp chia seeds
  • A pinch of lemon zest
  • MOUSSE
  • ½ cup fresh or frozen raspberries, thawed if frozen
  • 3 tbsp maple syrup
  • 1 tsp pure vanilla extract
  • 200mL (7 oz.) coconut cream, chilled in the fridge overnight
  • ASSEMBLY
  • 8 ladyfingers, broken into small pieces
  • Whole raspberries, toasted almonds, and chocolate/cacao nibs for decoration
Instructions
  1. For the chia jam, puree ½ cup of raspberries with 2 tbsp maple syrup, chia seeds, and lemon zest until smooth. Transfer jam to a small bowl and allow it to set in fridge until thickened.
  2. For the mousse, puree another ½ cup of raspberries with 3 tbsp maple syrup, and the vanilla extract. In a medium mixing bowl, whisk the coconut cream with the raspberry puree until evenly pink.
  3. To assemble, arrange a layer of ladyfinger pieces in the bottom of 5 small serving jars. Top with a thin layer of thickened chia jam. Fill the remaining volume of the jar with raspberry mousse. Seal each jar with plastic wrap and store in fridge overnight to allow mousse to set and ladyfingers to soften. Top decoratively with whole raspberries, toasted almonds, and chocolate briefly before serving.
Notes
Create chocolate shavings by running a vegetable peeler along the side of a chocolate bar.
