"Wildest Dream" Mango Salsa Boats

Ingredients
  • 2 whole mangoes
  • ½ of a 227g bag of fresh cranberries
  • 1 cup loosely packed cilantro leaves
  • 1 jalapeno pepper, deseeded and roughly chopped
  • 1 mandarin orange, flesh and zest divided
  • 3 tbsp maple syrup, divided
  • A pinch of sea salt
  • 3 oz cream cheese of choice (about ⅓ of a block), at room temperature
  • Crackers, to serve
Instructions
  1. Cut mangoes in half, removing the seed, and scoop out the flesh of the mango leaving a ½-inch border.
  2. In a food processor, blitz the cranberries, cilantro, jalapeno, orange flesh, 2 tbsp maple syrup, and sea salt until chopped up into small chunks (but not pureed).
  3. Cream the softened cream cheese with 1 tbsp maple syrup and 1 tsp orange zest until smooth.
  4. Spoon cranberry salsa into the mango boats and top with a dollop of cream cheese mixture. Garnish with additional orange zest if desired and serve with crackers. Alternatively, for hor d'oeurves, spread a little bit of cream cheese on each cracker and top with a chunk of mango and a spoon of salsa. Boats can be made ahead of time but prepared crackers should be served immediately.
