Tropical Fruit Granola

Ingredients
  • 3 cups oats*
  • 1 cup coconut chips
  • ½ cup raw macadamia nuts, roughly chopped
  • ⅓ cup chopped tropical dried fruit (pineapple, mango, papaya, ginger etc.)
  • A pinch of Himalayan pink salt
  • ½ tsp ground cinnamon
  • ¼ cup pineapple juice
  • ¼ cup melted coconut oil
  • ½ tsp pure vanilla extract
  • ¼ cup honey**
Instructions
  1. Preheat oven to 300⁰F and line a large cookie sheet with a silicone mat or parchment paper.
  2. In a large mixing bowl, mix together the oats, coconut chips, macadamia nuts, dried fruit, salt, and cinnamon.
  3. Whisk together the pineapple juice, oil, vanilla, and honey in a separate container before adding to the dry mixture. Combine thoroughly.
  4. Spread the granola mixture onto the prepared cookie sheet and firmly press down in a uniform layer.
  5. Bake in preheated oven for 30 to 40 minutes or until golden brown and nuts are toasted. Cool completely before transferring to an airtight container.
Notes
*Use gluten free oats if needed
**Vegan Option: substitute honey with maple syrup or agave syrup
