Tropical Fruit Granola

Serves: 10 to 12
- 3 cups oats*
- 1 cup coconut chips
- ½ cup raw macadamia nuts, roughly chopped
- ⅓ cup chopped tropical dried fruit (pineapple, mango, papaya, ginger etc.)
- A pinch of Himalayan pink salt
- ½ tsp ground cinnamon
- ¼ cup pineapple juice
- ¼ cup melted coconut oil
- ½ tsp pure vanilla extract
- ¼ cup honey**
- Preheat oven to 300⁰F and line a large cookie sheet with a silicone mat or parchment paper.
- In a large mixing bowl, mix together the oats, coconut chips, macadamia nuts, dried fruit, salt, and cinnamon.
- Whisk together the pineapple juice, oil, vanilla, and honey in a separate container before adding to the dry mixture. Combine thoroughly.
- Spread the granola mixture onto the prepared cookie sheet and firmly press down in a uniform layer.
- Bake in preheated oven for 30 to 40 minutes or until golden brown and nuts are toasted. Cool completely before transferring to an airtight container.
*Use gluten free oats if needed
**Vegan Option: substitute honey with maple syrup or agave syrup
