Matcha Black Sesame Muffins

The black sesame seeds in these muffins provide many essential minerals, calcium, and protein for optimum health. Matcha powder is also added for a deep earthy flavour, while providing antioxidants and improving brain function in addition to many other health benefits.
Ingredients
  • 1 c. oat flour
  • 2½ tbsp. coconut flour
  • 1½ tsp. baking powder
  • 2 tsp matcha powder
  • ¼ tsp. salt
  • 6 tbsp. honey
  • 2 eggs
  • 1 tsp. vanilla
  • ½ c. almond milk
  • ½ c. black sesame seeds
Instructions
  1. Preheat oven to 375 F.
  2. Prepare muffin tins with muffin liners.
  3. In a medium bowl, add in oat flour, coconut flour, baking powder, matcha powder and salt. Mix until dry ingredients are evenly combined.
  4. Add in the wet ingredients to the dry. Mix to combine, but do not over-mix.
  5. Fold in the black sesame seeds.
  6. Transfer batter into prepared muffin tins.
  7. Bake for 15-17 minutes, or until toothpick inserted comes out clean.
