Quick and easy to make on those lazy early mornings, these coconut pancakes only require 4 ingredients and one bowl! With two eggs per serving, these pancakes are protein-rich, providing the energy for the day ahead. The fibre and healthy fats from the coconut flour and yogurt in the pancakes will keep you satisfied for a longer duration of time. Requiring only 5-10 minutes to whip up and so few ingredients, there is no excuse not to have a wholesome breakfast in the morning now, do ya?
Ingredients
4 eggs
¼ c. coconut yogurt*
¼ c. coconut flour
¼ tsp. baking powder
Instructions
In a medium bowl, whisk the four eggs and the coconut yogurt together.
Whisk in the coconut flour and baking powder. The batter should be lump-free.
Preheat a non-stick frying pan in medium-high heat.
Once frying-pan is heated, use a tablespoon to measure out two tablespoons of batter for each pancake.
Cook until bubbles begin forming on the top, which takes around 3 minutes, then flip and cook on the other side for 1-2 minutes.
Top with maple syrup, peanut butter, seasonal fruit, or any other topping of your choice!
Notes
*You may sub coconut yogurt with any other yogurt 2% and above When making pancakes, I don't spray/grease my non-stick pan. I find that pancakes cook for evenly without the additional oil.
