The local cherry blossoms are blooming, the air is warming, the kids are back from spring break and… I’m already looking ahead to summer? Yup, in a week I will be freed from the reigns of exams and in full summer vacay mode. Not that my brain hasn’t already been wandering off the tracks. I’ve had a few too many study breaks that have turned into hours of researching activities to do when my friends are back, where to camp, trails to hike, recipes to make.
Besides Christmas, summer is the best time for making recipes. All the vibrant produce, all the holidays, all the occasions! We rarely ever make it to the end of our summer recipe bucket list, so this year we’re starting off early with this picnic-perfect chickpea cookie dough dip.
For the past few weeks I’ve been confined within the walls of my home, attempting to get some studying done as the April showers fall outside my window. In eager anticipation, I daydream about the upcoming months characterized by lazy days at the park with my best gal pals. Sharing a homemade picnic, lounging on the soft verdant grass, sun rays warm against my olive skin. That is the feeling of summer. Some days we spend from noon until sunset at the park, shifting our towels around a single tree to follow it’s shadow. We are so lucky to live in a town with a park that has amazing sunset views (and a really good ice cream parlour).
There are many great foods to bring on a picnic or to parties, dips being one of them. Everyone loves dips and thank goodness they are so easy to carry and can be served at room temperature. I get the most requests for hummus and homemade oat crackers, but as a person with a major sweet tooth, sometimes I feel like making something dessert-y.
If you have never encountered dessert hummus before, prepare to have your life changed today.
Behold. Chickpea cookie dough.
Chickpeas are pretty flavourless on their own, which works to our benefit today because it omits the need for butter and flour. Instantly we have boosted the fiber and lowered the fat! Almond butter adds richness and nuttiness, vanilla and chocolate chips for the classic chocolate chip cookie taste. The special ingredient in this recipe is bumble bloom, which is a plant-based honey alternative with a great advocacy story behind it.
If you want to give bees a vacation whilst eating spoonfuls of chickpea cookie dough, this is the recipe for you!
